Crushed gooseberry and cool-climate white wine. Nelson Sauvin takes its name from Sauvignon Blanc, and one sniff of the bag explains why.

What it does in your beer
The oil shows fresh-crushed gooseberry, a descriptor often used for Sauvignon Blanc, plus a white-wine fruitiness and tropical fruit. It is bold: the grower warns the fruitiness may be a little overpowering for the uninitiated and that some consider it extreme.
Handled with care, it goes both ways — big, punchy ales and subtle, aroma-driven lagers. American pale ales and IPAs are home turf.

How to use
- Late boil or whirlpool: the recommended kettle slot is the final (third) addition.
- Dry hop: the other recommended use.
- Go easy the first time: the grower says it may need judicious use in the brewhouse. Start with a smaller share of the hop bill and build up.
- Bittering is efficient at 11–13 % alpha: 10 g boiled for 60 minutes gives about 14 IBU in 20 L.
