Gooseberry, lychee and a splash of sauvignon blanc. Nelson Sauvin's white-wine fruit in a 20 ml bottle that adds no bitterness at all.

Zero bitterness · Pale ale 10–15 ml/hL · IPA 15–20 ml/hL · 20 ml ≈ 1 kg T90 pellets · New Zealand · 20 ml

What it does in your beer

Gooseberry and lychee lead, with passionfruit, tropical fruit, a sauvignon blanc character and a gentle spicy edge. The producer sums it up as fresh crushed gooseberry and new-world white wine. Since the oil carries no alpha or beta acids to speak of (each below 0.1 %), it changes aroma and flavour, not bitterness.

It comes from hops that are never kilned, extracted within a day of picking, with no leaf or cone material in the bottle. West Coast and NZ IPAs, hazy IPAs, pale ales, lagers and pilsners are all fair game.

How much for a 20 L batch

Lager & lighter styles (3–5 ml/hL) 0.6–1.0 ml
Pale ale (10–15 ml/hL) 2–3 ml
IPA (15–20 ml/hL) 3–4 ml
Hazy IPA — producer's starting trial (20–50 ml/hL) 4–10 ml
Hop water (3–15 ml/hL of water) 0.6–3 ml

Approx. — the producer's per-hectolitre doses scaled down to 20 L. A single bottle is enough for any row. Measure it with a syringe rather than by eye.

How to use

  • Shake before use.
  • Stir the measured dose into a small volume of the beer, or into warm (never hot) water, then add it to the fermenter, bright tank or keg.
  • In the dry hop, it can sit alongside pellets and take over part of their job without thinning body or mouthfeel. Start by replacing 25–50 % of the pellets.
  • For a whirlpool addition, cool the wort below 85 °C first. The kettle is off limits.
  • Carbonate after dosing, not before — it protects head retention.

Swap it for

Want pellets instead? Nelson Sauvin T90 pellets are in our range. Use the producer's ratio as a guide: 20 ml of oil ≈ 1 kg of T90 pellets.

Pairs well with

Brewing a West Coast IPA or a NZ pale ale? Try it with Crisp Extra Pale Ale as the base and SafAle US-05 for a clean ferment that leaves the fruit in front.

Storage & shelf life

  • Shelf life sealed: 2 years. Keep it out of direct sunlight; cool and stable is best, and the fridge is the producer's pick.
  • Once opened, displace the air with CO₂ if possible, seal and refrigerate, then use it within 2–3 months.
  • Freezing is a no.

Good to know

  • 20 ml of concentrated oil. It brings no bitterness, so keep your usual bittering addition.
  • Neat, it's a flammable liquid and a skin and eye irritant that can cause skin sensitisation (producer's safety data sheet). Keep it away from children and open flames, and dilute it in beer or water — never take it straight.

FAQ

How much Nelson Sauvin oil for a 20 L pale ale?
Around 2–3 ml: the producer's pale ale rate is 10–15 ml/hL. Step up to 3–4 ml for an IPA.

Oil or pellets — what's the difference?
The oil has no plant material, so it doesn't soak up beer or leave hop sludge, and it adds no bitterness. By the producer's guide, 20 ml does the aroma work of about 1 kg of T90 pellets.

Can I use it in the whirlpool?
Yes, once the wort is below 85 °C. Don't add it to the boil.

Can I make hop water with it?
Yes, at 3–15 ml/hL of water — about 0.6–3 ml for 20 L. The producer's hop water recipe combines Nelson Sauvin with Motueka and Riwaka oils.
