Tropical fruit up front, a resinous streak of pine behind it. Idaho 7 is a juicy hop with a backbone — and at 12–15 % alpha it bitters as confidently as it smells.

What it does in your beer
The core is tropical fruit with a hint of pine. Grower data adds citrus, stone fruit, berry and even bubblegum, and some descriptions pick up pineapple, melon, grapefruit and black tea. It's a bold, pungent hop, so a modest charge goes a long way.
High alpha means it pulls double duty: bittering, whirlpool and dry hop all work. It carries a single-hop beer on its own and is at home in NEIPAs, West Coast IPAs, double IPAs and pale ales.

How to use
- Kettle: recommended for the second and third additions. 10 g at 60 minutes gives about 16 IBU in 20 L — plan the bittering charge with that in mind.
- Whirlpool and dry hop: both are listed uses for aroma.
- Single hop: it's recommended as a single-hop variety, so an all-Idaho 7 pale ale is a fair test of what it can do.
- Late additions still add bitterness at this alpha — about 3 IBU per 10 g even at 5 minutes.
Swap it for
Out of Idaho 7? Variety data lists Centennial, Chinook, Krush® and Simcoe® among its similar varieties — all four are in our range.
Pairs well with
Brewing a NEIPA? Try it with BESTMALZ BEST Pale Ale, a share of oat flakes and SafAle US-05 for a clean, neutral ferment.
Blending? Citra® sits comfortably next to it.
