Caramel, honey and pastry, with an orange-red glow in the glass. CARARED® is how an Irish red, a Vienna lager or a red IPA gets its colour from caramel malt rather than roast.

40–60 EBC · 15.5–23.1 °L · Up to 25 % of grist · Caramel, honey & pastry · Orange-red shine · Sold per 100 g

What it does in your beer

A special manufacturing process gives CARARED® its typical aroma: malty-sweet, with caramel, honey and pastry notes. In the beer it intensifies and stabilises the taste profile and pushes the colour towards an orange-red shine.

For a deep red, Weyermann recommends combining it with Melanoidin malt. It lists no enzyme activity, so mash it with a base malt, at up to 25 % of the grist. Weyermann's list runs from Vienna lager and Rotbier through Helles bock, APA, red and double IPAs, bitters and Irish and American reds to Baltic porter, Weissbier and Flanders red.

How much for a 20 L batch

Up to 25 % of the grist. On a typical 5 kg grist for 20 L that's up to 1.25 kg, i.e. up to 12 × 100 g.

As a guide, 500 g in 20 L adds ≈ 7.6 EBC of colour on its own and ≈ +4.9 gravity points (≈ +1.23 °P); 1 kg adds ≈ 12.3 EBC and ≈ +9.8 points (≈ +2.46 °P), at 75 % efficiency (approx., Morey colour / extract-based gravity, mid 50 EBC, 74 % extract).

Quantity = number of 100 g units, so 8 = 800 g.

How to use

  • Mash it with your base malt; Weyermann lists no enzyme activity for CARARED®.
  • For deep red rather than orange-red, add Melanoidin malt — Weyermann's own recommendation.
  • Keep it within Weyermann's up to 25 % of the grist.

Pairs well with

Brewing an Irish or American red ale? Try it with BESTMALZ BEST Pale Ale, Weyermann Melanoidin malt and SafAle US-05.

Brewing a Vienna lager? Swap the base for BESTMALZ BEST Vienna.
