Malty sweetness, fine caramel and a rounder mouthfeel. CARAHELL® is the light caramel malt Weyermann lists first for Munich Helles — and it's just as much at home in pale ales and wheat beers.
20–30 EBC · 8.0–11.8 °L · 10–15 % of grist · Fine caramel · Foam & mouthfeel · Sold per 100 g
What it does in your beer
Weyermann's process caramelises the grain almost completely. It tastes malty-sweet with fine caramel notes, helps foam and foam stability, and improves the mouthfeel of the beer.
Weyermann recommends 10–15 % of the grist, and up to 30 % in specialty beers. It lists no enzyme activity, so it needs a base malt in the mash. Typical uses: Munich Helles, pale Kellerbier, Dortmunder Export, India Pale Lager, blonde and pale ales, IPAs, ordinary bitter, Weissbier and Hefeweizen.

How much for a 20 L batch
10–15 % of the grist. On a typical 5 kg grist for 20 L that's 500–750 g, so order 5–7 × 100 g.
As a guide, 500 g in 20 L adds ≈ 4.8 EBC of colour on its own and ≈ +4.9 gravity points (≈ +1.22 °P) at 75 % efficiency (approx., Morey colour / extract-based gravity, mid 25 EBC, 74 % extract).
Quantity = number of 100 g units, so 6 = 600 g.
How to use
- Put it in the mash with your base malt, which does the converting.
- 10–15 % for the everyday job; up to 30 % if you're building a specialty beer around it.
- Need foam and body with less colour? CARAPILS® is Weyermann's paler option at 2.5–6.5 EBC.
Pairs well with
Brewing a Helles? Czech Pilsner malt plus SafLager W-34/70 is the obvious team.
Brewing a Hefeweizen? Pair it with BESTMALZ BEST Wheat and SafAle WB-06.
