What it does in your beer

The aroma is Citra's, turned up: lime, grapefruit, mango, passion fruit and a light touch of peach. With the bract removed, the processor reports less grassy, vegetal character and more beer left after dry hopping, because there's less hop matter to soak it up.

It's made for late additions and the dry hop in IPAs, NEIPAs and American pale ales.

How to use

• Converting a T90 recipe? Start at 40–50 % of the T90 weight: 40–50 g of Cryo for every 100 g of T90, then adjust to taste.
• Kettle: late additions only. Early boil additions just boil the aroma away.
• Whirlpool: a good way to build aroma while cutting the trub load of big late additions.
• Dry hop: more aroma with less beer lost to hop debris.

Need a bittering charge or a standard pellet? Citra T90 is the same variety in regular form — figure about 100 g of T90 for every 40–50 g of Cryo.

Storage & shelf life

• Store sealed, cold and dark, away from moisture.
• Concentrated lupulin is the part of the hop you're paying for, so don't leave an opened pack in the warm: push the air out, seal it and brew with it soon.

FAQ

How much Cryo replaces T90?
Start at 40–50 % of the T90 weight — 40–50 g of Cryo for every 100 g of T90 — and adjust from there.

Can I use Cryo for bittering?
It's meant for late additions, the whirlpool and the dry hop. Early boil additions waste the aroma.

How is it different from Citra T90?
T90 pellets are the whole milled cone. Cryo pellets are concentrated lupulin with nearly twice the resin content and far less leafy material.

Why can the alpha on my pack differ?
Our product data gives 10–14 %, but Cryo concentrates the resin, so lots may read higher. Always calculate with the pack figure.
