Mango, pineapple and blueberry, with a citrus edge and a hint of resin: Mosaic, concentrated. Cryo pellets carry the lupulin without the leafy bulk, so the dry hop hits harder and the fermenter keeps more beer.

What it does in your beer

Mosaic is layered: tropical mango and pineapple, blueberry, a citrus touch and gentle resin, with variety data adding stone fruit and woody, herbal notes. In Cryo form the processor reports reduced grassy, vegetal character.

It's built for late hopping and the dry hop in IPAs, NEIPAs, American pale ales and other aroma-led ales.

How to use

• Swapping from T90? The processor suggests starting at 40–50 % of the T90 weight, i.e. 40–50 g of Cryo per 100 g of T90.
• Kettle: late additions only — early in the boil, the aroma is gone before the wort cools.
• Whirlpool: builds aroma and keeps the trub load of big late additions down.
• Fermenter: more aroma, less beer lost to trub.

Prefer standard pellets? Mosaic T90 is the same variety — roughly 100 g of T90 for every 40–50 g of Cryo.

Variety data lists Centennial, Citra®, Nelson Sauvin and Simcoe as similar to Mosaic®. Citra® also comes as Cryo in our range.

Pairs well with

Brewing a hazy IPA? Try it on BESTMALZ BEST Pale Ale with wheat flakes for haze and body, and Lallemand New England yeast.

Storage & shelf life

• Keep the pack sealed and cold, in a dry, dark place.
• Opened packs lose aroma fastest, so reseal airtight and brew soon.
• Keep it away from strong odours; hops pick them up.

When should I add Cryo hops?

Why does Cryo leave more beer in the fermenter?
