Open fermentation for kombucha — 800 L stainless open-top fermenter.

The BrewTaurus PRO OTF-800 is a single-wall SUS304 open-top vessel for kombucha and other aerobic ferments: wide open top for the SCOBY and oxygen exchange, removable lid, sanitary drain, sample valve and thermometer port. 800 L effective, 1,000 L total. Also used as an open fermenter for traditional top-fermented ales.

Kombucha workflow

Brew sweet tea in the kombucha brewing system, cool, transfer to the OTF-800, add SCOBY and starter, ferment open at ambient 22–28 °C for 7–14 days, then rack to a bright beer tank for flavouring, carbonation and cold storage. One open-top fermenter per weekly batch keeps a continuous rhythm.
