Intense roast: coffee, cocoa and dark chocolate at 1300–1500 EBC. CARAFA® Type 3 is the colour and roast engine for imperial stouts and American porters — dosed by the handful, not the bucket.
1300–1500 EBC · 490.6–566.0 °L · Up to 5 % of grist · Intense coffee, cocoa & dark chocolate · No enzymes · Sold per 100 g
What it does in your beer
Like all CARAFA® malts it is gently roasted for high colour intensity. Type 3 is the intensely roast-aromatic one, with coffee, cocoa and dark chocolate notes, and a small share brings a lot of colour.
No enzyme activity. Weyermann recommends up to 5 % of the grist, for American porter, Irish extra, foreign extra, imperial and Russian imperial stouts — and, a little surprisingly, Altbier.

How much for a 20 L batch
Up to 5 % of the grist. On a typical 5 kg grist for 20 L that's up to 250 g.
As a guide, 100 g in 20 L adds ≈ 24.4 EBC of colour on its own and ≈ +0.9 gravity points (≈ +0.23 °P) at 75 % efficiency (approx., Morey colour / extract-based gravity, mid 1400 EBC, 65 % extract; treat colour estimates this dark as rough).
Quantity = number of 100 g units, so 1 = 100 g.
How to use
- Add it to the mash with your base malt; it contributes no enzymes.
- Up to 5 % of the grist, per Weyermann. Start at the low end if you want colour more than roast.
- Imperial stout? Put the roast here and build body and sweetness from the rest of the grist.
Pairs well with

FAQ
How is Type 3 different from Type 2?
Darker and more intense: 1300–1500 EBC and intensely roasted, versus 1100–1200 EBC for Type 2. Same recommended maximum of 5 %.
Is this CARAFA® SPECIAL?
No. This is regular CARAFA®. The SPECIAL series has a large part of the husk removed to minimise roasted bitterness.
How much for an imperial stout?
Weyermann's maximum is 5 % of the grist. 100 g in 20 L already adds ≈ 24 EBC on its own (approx.).
Whole grain or crushed?
Pick it in the Milling option. Crushed is milled before dispatch — brew within about 5 days.
