Grapefruit, flowers and a touch of pine: the aroma that helped define the American pale ale. Cascade is the classic late-addition and dry-hop variety.

What it does in your beer
Cascade gives a floral, spicy and citrus character with balanced bitterness. Variety data lists grapefruit, floral, pine, herbal and grassy notes, and other variety data mentions passion fruit and currant behind the grapefruit.
Bred from Fuggle and the Russian Serebrianka and released in 1972, it's the reference hop for American pale ales and blonde ales, and just as useful in IPAs and session IPAs.

How to use
- Late boil (third addition): recommended — this is where Cascade's aroma survives into the glass.
- Dry hop: recommended, and the classic use.
- Bittering works, but at 4.5–7.0 % alpha you need more hop per IBU: 10 g for 60 minutes gives about 7 IBU in 20 L.
