Hold and raise mash temperature directly in the recirculation loop.
An in-line heating tube on the mash recirculation circuit, controlled by the PID cabinet. The wort is pumped through the heater and back over the grain bed, so step mashes are driven by the wort temperature itself, not by the jacket or the hot liquor tank.
