Malt and honey on the palate, a full golden colour in the glass. BEST Vienna has the enzymes to carry a whole Vienna lager or Märzen on its own.

8–10 EBC · 3.5–4.2 °L · Up to 100 % of grist · Diastatic power min. 250 WK · Malt & honey · Sold per 100 g

What it does in your beer

BESTMALZ describes the result as a full golden colour, excellent foam and a pleasant, full-bodied taste. Expect malt and honey in the flavour, with a light bready note. At 8–10 EBC it sits a step darker than Pilsner malt, and with at least 250 WK of diastatic power it can be 100 % of the grist.

Home ground is Vienna lager, Märzen, export, bock and amber speciality lagers; it also works in porters and in ales with a pronounced malt profile. Use it as the whole base, or blend it with Pilsner malt for a paler result.

How much for a 20 L batch

Up to 100 % of the grist. An all-Vienna beer on a typical 5 kg grist for 20 L means 5,000 g — order 50 × 100 g.

Each 1 kg in 20 L adds ≈ +11.1 gravity points (≈ +2.8 °P) at 75 % efficiency. A 5 kg all-Vienna grist lands around OG 1.055 with ≈ 12.5 EBC of colour (approx., extract-based / Morey; mid 9 EBC, extract 80.5 %, moisture 4.9 %).

The quantity box counts 100 g units: 10 is 1 kg, 50 the full 5 kg grist.

How to use

  • Use it as the base malt, on its own or blended with Pilsner malt.
  • With a diastatic power of at least 250 WK it converts without help from another malt.
  • Order in 100 g steps: 2.5 kg = 25, 5 kg = 50.
  • No mill? Pick Crushed and put the brew day in the diary within about 5 days of delivery.

Pairs well with

Brewing a Vienna lager or Märzen? Try it with a share of Weyermann® Munich Malt Type 1, Žatec Semi-Early Red (Saaz) hops and SafLager W34/70.

Storage & shelf life

  • Keep it cool and dry: BESTMALZ specifies max. 20 °C and max. 35 % relative humidity for a shelf life of at least 24 months.
  • Reseal an opened bag well — malt that picks up moisture goes slack.
  • Arrived crushed? Brew the Vienna within about 5 days of delivery.

FAQ

Can I brew with 100 % Vienna malt?
Yes. BESTMALZ specifies it for up to 100 % of the grain bill, and at min. 250 WK it has the enzymes to convert on its own.

Vienna or Pilsner malt?
Vienna is darker and maltier: 8–10 EBC with malt and honey notes, against 3.1 EBC for our Czech Pilsner malt. Reach for Vienna in amber lagers and Märzen, Pilsner in pale lagers.

How much for 20 L?
For an all-Vienna beer on a 5 kg grist, 50 × 100 g — roughly OG 1.055 at 75 % efficiency (approx.).

Do I need a mill?
Not if you choose Crushed in the Milling option: it is milled before dispatch — brew within about 5 days. Whole grain ships unmilled.
